Ingredients

  • 1 bunch of kale
  • 3 medium baking potatoes
  • 1 beef bouillon cube
  • 1 cup water
  • 1 large beef smoked sausage rope (about 14 ounces)
  • Milk as needed (about ½ cup)
  • 4 tablespoons butter, melted

Instructions

  1. At least one day ahead, wash and remove stems from kale; discard stems. Shake out the leaves to dry as much as possible. Place in one-gallon plastic bags; seal and place in freezer.
  2. When frozen, crush the kale leaves to small pieces letting some air out of the bag. It may be necessary to freeze it again; crush until leaves are tiny pieces.
  3. Peel potatoes and cut into quarters. Place in the bottom of a deep saucepan; add broth cube and water. Add crushed frozen kale on top of the potatoes; add sausage on top of the kale.
  4. Cook for about 30 minutes or until the potatoes are tender; remove the sausage. Smash (mash) the kale and potatoes. Add milk as needed. The kale should be completely mixed with the mashed potatoes. To serve, place the sausage on top and serve with melted butter on the side.
