Ingredients

  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons oil
  • 1 pound ground beef
  • 1 (14.5-ounce) can tomatoes
  • 1 (16-ounce) can red kidney beans, drained
  • 1 (19-ounce) can chili without beans
  • 2 teaspoons salt
  • ¼ teaspoon pepper
  • 2 tablespoons chili powder
  • 2 cups (8 ounces) shredded Cheddar or Mexican cheese blend

Instructions

Preheat oven to 400°F. Sauté onion and garlic in oil until soft; remove and set aside. Brown ground beef in skillet; drain excess fat. Stir in onion mixture, tomatoes, beans, chili, salt, pepper and chili powder. Pour into a 12-cup baking dish; sprinkle with cheese. Bake 30 minutes or until hot and bubbly.

Note: A 12-cup dish is equivalent to a 9x13-inch or 10x10-inch dish.
