- 2¾ cups fresh vegetables (bell peppers, mushrooms, red onion and spinach leaves), sliced
- ½ cup marinara sauce
- 4 pita flatbread rounds
- 1 cup (4 ounces) shredded Italian cheese blend
- 1 teaspoon Italian herb seasoning
Preheat oven to 450°F. Coat vegetables in nonstick cooking spray; reserve.
Spread marinara sauce over flatbread rounds. Combine cheese with herb seasoning. Top flatbreads with half of cheese, then vegetables. Top with remaining cheese. Place on a baking sheet and bake for 10 minutes or until crust is golden brown and cheese is melted.
