For the Vinaigrette:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the Salad:

  • 1 large head romaine lettuce, chopped
  • 1/2 red onion, thinly sliced
  • 1 1/2 cups cherry or grape tomatoes, halved
  • 1/3 cup pitted black olives, halved
  • 1/3 cup sliced or whole pepperoncini peppers
  • 2 cups croutons, more or less depending on preference
  • 1/2 cup grated Parmesan cheese, plus extra for serving

For the Vinaigrette:

  1. Add all ingredients to a jar with a lid. I use a mason jar. Shake vigorously to combine all ingredients. Use immediately or store in the fridge for about a week.

For the Salad:

  1. Add all salad ingredients to a large salad serving bowl. Toss to combine, drizzle with the vinaigrette and toss again to coat the salad. Serve with more Parmesan cheese sprinkled over the top.
