Ingredients

  • 1 medium sweet potato
  • 1 canned chipotle pepper in adobo sauce
  • 2 tablespoons fresh lime juice
  • 2 to 3 tablespoons salsa
  • ¼ cup (1 ounce) shredded Pepper Jack or 50% Reduced-fat Pepper Jack cheese

Instructions

Preheat oven to 350°F. Bake sweet potato 45 minutes or until tender. Let cool slightly and peel. Place baked sweet potato in small food processor or blender; add remaining ingredients. Pulse until well combined.
