6 Irresistible Recipes We’re Making in Quarantine

Like most people, the Dairy MAX team has been social distancing and staying home for the last several weeks – which means many of us have been cooking more. Of course, #QuarantineRecipes are EVERYWHERE, but we wanted to know which dishes were really taking the cake for our team.

Here are the top 6 Dairy Discovery Zone recipes we’ve relied on in the last few weeks. Happy #QuarantineCooking!

Banana Bread

Elizabeth Hurst, Director, Corporate Communications

"Our banana bread is a favorite at my house and among all our friends! The best part is, this makes two loaves. These days, I freeze the second loaf to enjoy later. The secret dairy ingredient is sour cream – and it makes for the most perfectly textured banana bread!”

Orange Cream Ice Pops

Susan Allen, Manager, Issues and Crisis

“I was looking for a recipe to use orange juice because the school meals we’re getting include it, but my kids don’t care for it. I found the Orange Cream Ice Pops, and my kids love popsicles (who doesn’t). The recipe only takes three ingredients. I didn’t have any Greek yogurt, so I read online that I could substitute buttermilk. Of course, I didn’t have buttermilk either, but you can make a substitute by adding white vinegar or lemon juice to milk, and I had both of those! We made a batch according to the recipe and a batch with a banana added, too – both were delicious!”

Milk-Braised Beef Tacos with Calabacitas

Will Mallow, Manager, Business Development Sales and Marketing

“In Austin, I’m used to being able to head out for street tacos anytime I want. Times are a little different now, but this recipe really fills the void. Braising the beef in milk took the tender juiciness to another level. And the calabacitas side dish is the perfect pairing. I felt like I was at one of my favorite taquerias.”

Cheesy Guacamole

Marley Oldham-Carnes, M.S., RDN, LD, CSCS, CPT, Program Coordinator, Health and Wellness

“One of my favorites is this Cheesy Guac. It is the perfect sidekick to your queso. The best part, besides tasting delicious, is that the blended cottage cheese gives the guacamole a smooth, creamy texture and is high in protein. It is a perfect pair!”

Dark Chocolate-Covered Strawberry Smoothie

Jen Duhon, RDN, LDN, Program Coordinator, Health and Wellness

“My daughter Lauren has made the Chocolate Covered Strawberry smoothie. She makes smoothies almost daily. We always have frozen strawberries, yogurt and milk on hand. And the rest of the ingredients are pantry staples. Plus, I love how easy it is that a 13-year-old can make it on her own!”

Caprese Salad Skewers

Christina Jinez, School Wellness Consultant

“These skewers are a very simple and easy to make – yet super delicious – snack. Our family loves La Madeline’s tomato basil soup and this recipe has similar ingredients which, when paired with French bread, makes it a family favorite.”
