Ingredients

  • ¾ cup butter, softened
  • 3 cups sugar
  • 3 eggs
  • 1½ cups (12 ounces) sour cream
  • 2 teapoons vanilla
  • ½ teaspoon almond extract
  • 6 ripe medium bananas, mashed
  • ½ teaspoon salt
  • 4½ cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ cup chopped pecans

Instructions

Preheat oven to 325°F. Grease and flour two 9x5-inch loaf pans.

Cream butter and sugar in large bowl with mixer. Add eggs, sour cream, vanilla and almond extract; mix well. Add bananas and mix. Combine dry ingredients and add to bowl; mix until just combined. Stir in pecans. Pour into pans and bake for 1 hour or until wooden pick inserted in center comes out clean. Cool 5 minutes; remove from pan to wire rack to cool completely.
